Make a mayonnaise, mixing the eggs with the mustard, salt and pepper. Add a few drops of lemon and, after a few, the olive oil, while stirring vigorously. Reserve. Cut the fresh salmon, smoked salmon, apples, and roe. Add the mayonnaise, fresh dill and, if necessary, salt and pepper. Serve as an appetizer with slices of bread, or as a starter alongside a small leafy salad.
